    Mendenhall Outdoors Smoked Beef Stick or Jerky Gun Recipe

    This recipe is good with regular ground beef, deer venison, elk, or other wild game.
    • 5 lb. lean ground beef
    • 5 rounded tsp. Morton Tender Quick Or half to one tsp pink curing salt
    • 2 1/2 tsp. mustard seed
    • 2 1/2 tsp. garlic salt
    • 2 1/2 tsp. coarse ground pepper
    • 2 1/2 tsp. Red Pepper Flakes
    • 2 1/2 tsp. Garlic Powder/Granulated
    • 2 1/2 tsp. Onion Powder/Granulated
    • 2 1/2 tsp. Crushed Fennel
    • 2 1/2 tsp. Crushed Anise
    • 2 1/2 tsp. Cayenne Pepper
    • 2 Tbls. Paprika
    • 2 tsp. ClearLiquid Smoke
    • 1 tsp. hickory salt
    I mix all the ingredients together in a big bowl or dish, then make the beef sticks or jerky gun strips and get them ready to put on the smoker. You can use less meat, just adjust the rest of the ingredients accordingly. Smoke it for 2-4 hours depending on your smoker.

    Can also be made in the oven, air fryer, or made into patties and cooked in a frying pan. Depending on how I am cooking it, sometimes I also add cheese and jalapenos. This makes the perfect amount of beef sticks or jerky strips that you can freeze most of it, and pull out enough for you and your family to eat over a two or three day period. I put the sticks that I keep ready to eat in the fridge, and my family munches on it for snacks. As your defrosted and ready to eat batch gets low, you just pull more out of the freezer. Good Stuff for camping, fishing, and hunting.
